eggplant in general is just amazing but sometimes the process of salting and such is too much when i work all day and just want a little sandwich. its a nice touch. unreal flavor. i even microwaved it and was super stoked on it.

Never heard of Trader Joe's. But I did have eggplant at Bertucci's the other day. Not impressed.

Believe it or not, I've actually been pretty impressed by Papa Gino's eggplant parm sandwiches but I haven't had one in a while so I don't know if they hold up.

I'm very very very picky when it comes to eggplant.

I dig the eggplant -- haven't had it in awhile. I used to make it in combination with chicken -- like a chicken/eggplant parm. That way, I can hold true to my rule of something needing to die for my meal.

it needs to be cut and cooked well for me. I hate when you find hard lumps... ugh.. it's like whne you get a crusty chunk from the back of your throat if cooked wrong.
