As we get closer to sea level, you can see a) more soil, and b) more vegetation. Vegetation is important for gathering plants (for food, dye, thread, etc.) and chopping trees (for lumber) (duh). Soil is faster to dig through, and can support aboveground agriculture, but rock is where you find ore, gems, and "economic stone" (stone that can be made into fuel).
