AAC is technically 'lossless' meaning any loss through compression is usually in frequencies not audible by human ears. all my mp3's are ripped @ 192k or better. Don't use WMA, because wma's quality sucks, even on the highest settings, and I believe M$FT adds DRM bits to the files (of course they'd probably deny this). so mp3 and aac are your two choices, both of which your iPod supports natively, so the choice is yours.
